The  Elderflower Cucumber spritzer 

If you love a fresh summer cocktail recipe, this is the drink for you. With cool cucumber and delicious elderflower flavours you simply can’t go wrong.

Though this drink is simple to make, it feel and tastes high-class and deeply refreshing.

Whether you’ve just got home from a hike or you’re spending the afternoon relaxing in the sun, this spritzer should be on hand. Fresh, fizzy, and flavourful.

Ingredients

  • 1 cucumber, ends trimmed

  • ½ bottle white wine Preferably a dry white

  • 200ml P.S. Modern Elderflower syrup or to preferred taste 

  • Few mint sprigs, leaves picked

  • 2 x 1L bottles soda water, chilled

Method

  1. Chop the cucumber into a few chunks, then put in a blender or food processor with the wine and elderflower syrup. Whizz until well blended, then pour through a sieve set over a large bowl or jug. Tip the contents of the sieve back into the machine, whizz again until pulpy, then sieve again into the liquid already collected. Chill until ready to serve.

  2. Add 1-2 tbsp of the cucumber pulp from the sieve into the liquid and discard the rest.

  3. To serve, fill glasses with a few ice cubes and some mint leaves. Pour in enough cucumber base to come halfway up the glass, then top up with soda water.
